B is for: Baseball Jello Shots

It’s baseball season!!

Being your resident sports reporter/foodie/jello shot expert, it only seemed fitting I provide you with something special as the 2012 season kicks off.

People ask me all the time what my favorite sport is. As a kid, it was definitely basketball. I loved playing it and I loved watching Michael Jordan (who didn’t?). As I got older, it switched to football (Go Cougs!) And I still love lazy NFL Sundays during football season. Covering the Sharks has made me understand and appreciate hockey.

But my favorite sport to cover has to be baseball. It can be a grind during the so-called “dog days” of summer, but in the end, I really do love going to the ballpark everyday. (Especially when you get to cover a World Series Championship!)

Credit for the idea actually goes to my friend Devon, who thought of this one back in February. Executing it seemed easy enough…I had done a white layer of jello in my Santa Hat Jello Shots around Christmas, so I already knew I had a recipe that worked by using coconut milk, a little sugar and my favorite whipped cream vodka. (The mixture will look a little cloudy initially, but it will turn more solid white once it firms up in the fridge.)

However, creating the “stitching” gave me some issues. I tried little tubes of icing, but the condensation from the jello made it watery-looking. Same with the gel tubes. My next idea involved making a second batch of red jello and cutting little pieces of jello and placing them on top of the “baseballs.” Of course, the jello kept ripping and I had no desire to do surgery on red jello for that long. Then the light bulb went off….Pull ‘n’ Peel Twizzlers!!! I was really pleased with myself on this one.

All you do is cut little curved slits in the white portion, place in a piece of the Twizzlers, and you have simple and festive jello shots…perfect for a tailgate, viewing party, or (hopefully) World Series party! 🙂

Baseball Jello Shots

Ingredients
  • 1/2 cup coconut milk
  • 1/2 cup water
  • 1.5 to 2 packets Knox unflavored gelatin (depending on how firm you want your shot to be)
  • 3 tablespoons sugar
  • 1 cup whipped cream vodka (I like Pinnacle)
  • Twizzlers Pull ‘n’ Peel
Instructions
  1. Pour water and coconut milk in a small saucepan and sprinkle with gelatin. Allow to soak in for a minute or two. Add sugar and heat until gelatin and sugar have dissolved, stirring occasionally.
  2. Remove from heat, and pour in vodka. Spoon 3 tablespoons into each hole of a muffin pan. (I prefer using a silicone pan so they “pop” out easier.) Allow to set several hours or overnight.
  3. Gently remove your “baseballs” and arrange on a platter. Cut curved slits on each side to mimic the stitching lines. Separate licorice into individual ropes, and cut into small pieces. Right before serving, press licorice into the slits and serve!

    Can you make these without the vodka, so its more of a "kid friendly" treat???

      Hmmmm…I'm sure you could, I'm just not sure how they would taste. I would maybe just add a teaspoon of vanilla and sub more coconut milk for the vodka and perhaps fold in some whipped cream?

    I'm not a fan of coconut milk but I want to make these for my brother-in-laws 40th bday party that starts at a Tigers game and ends with dessert! What do you suggest subbing for the coconut milk?

      You can use sweetened condensed milk, but omit the sugar or it will be too sweet!
